The Journey
We rolled into Portage with one truck, a wood smoker, and a menu that changed by the week.
One country became eleven. The passport idea was born the night we sold out of both jerk chicken and pad thai.
Long lines at county fairs and food-truck rallies turned regulars into a full-blown following.
Weddings, graduations and brewery takeovers โ we learned how to feed three hundred guests without losing the handmade touch.
More stops, more counties, same family recipes. The tour keeps expanding, one neighborhood at a time.
